There are two kinds of pumpkin spice lattes. The first one tastes like a candle had a really confident marketing team. The second tastes like actual pumpkin, real spice, and coffee that still shows up to do its job.
This recipe is the second one. We cook the pumpkin with sugar and spices for about a minute to wake it up, then whisk in espresso and finish with steamed or frothed milk. It is cozy, it is creamy, and it smells like you are about to put on a sweater even if it is still 78 degrees outside.
