Pickled cabbage is my favorite kind of kitchen shortcut because it tastes like you tried harder than you did. It is crunchy, punchy, a little sweet, and it makes basically any meal feel more awake. Tacos getting sleepy? Pickled cabbage. Rice bowl feeling beige? Same fix.
This is a quick pickle, which means no canning, no boiling jars, no drama. We pour a hot brine over shredded cabbage, let it hang out for at least an hour, and then we start “accidentally” eating it out of the jar.
