In construction, scaffolding is the temporary structure that helps everything else happen safely and steadily. In my kitchen, scaffolding is the little system that keeps a recipe from turning into a sticky, crumbly tragedy. And these cookie cups are basically edible proof. They have crisp edges, walls that hold their shape, and a filling that sets up like it means business.
They are also ridiculously fun to assemble. You can go full tidy geometry with the pretzel “beams,” or let it get a little chaotic and call it rustic. Either way, you end up with a dessert that looks like you tried harder than you did. Those are my favorite kinds.
