Do I need to brown oxtail first?
You do not have to, but I really recommend it. Browning builds that roasted, beefy base that a slow cooker cannot create on its own. If you are skipping it, add an extra tablespoon of tomato paste and 1 teaspoon soy sauce (optional) to help boost depth.
Can I cook oxtail on high?
You can, but low is better. On LOW, plan for about 8 to 10 hours and start checking around hour 8. On HIGH, about 5 to 6 hours can work, but the texture is usually less silky. Oxtail is happiest when it takes its time.
How do I know it is done?
The meat should be very tender and pull away from the bone with a fork. If it still feels tight or chewy, keep cooking. Oxtail has a stubborn phase, then suddenly it is perfect.
What if my sauce is greasy?
Skim fat off the top with a spoon, or chill the insert and remove the solid fat. Also, do not drown the pot with extra liquid. Add enough so it comes about halfway to two-thirds up the oxtail once everything is in. Oxtail releases plenty as it cooks, but you still want enough in there so nothing scorches around the edges.
What can I use instead of red wine?
Swap in more beef broth plus 1 tablespoon balsamic vinegar (or 2 teaspoons red wine vinegar) for that same little pop of acidity.
Can I add potatoes to the slow cooker?
Yes. Add baby potatoes in the last 3 to 4 hours on LOW so they do not turn to mush. I still prefer serving over mashed potatoes made separately, because gravy deserves a smooth landing pad.
