Roasted sweet potato vs canned puree
Which tastes better?
Roasted sweet potato usually gives the best flavor. Roasting evaporates extra moisture and concentrates sweetness, so the hummus tastes deeper and often less loose than blends made with puree.
Canned sweet potato puree is convenient and still tasty, but it can be more uniform and may blend up a little looser or a little thicker depending on the brand.
Can I use canned sweet potato puree in this recipe?
Yes. Use 1 cup canned sweet potato puree in place of the roasted sweet potato. If it is unsweetened, you are good to go. If it is labeled for “pie filling” or has added sugar and spices, the flavor will shift sweeter and more dessert-like.
My hummus is too thick. How do I thin it?
Blend in liquid while the food processor is running, 1 tablespoon at a time. Best options:
- Cold water (most common and clean tasting)
- Aquafaba (the liquid from the chickpea can) for extra silkiness
- Lemon juice for more tang
- Olive oil for richer, more spreadable hummus
If you want a true dip consistency, you will usually need 2 to 6 tablespoons of liquid depending on sweet potato size and how thick your tahini is.
Why did my hummus turn gritty?
Common culprits are under-blended chickpeas or very thick tahini. Blend longer than you think you need, and do not be shy about adding a splash of water to help everything turn creamy.
Do I have to peel the chickpeas?
No. Peeling makes hummus a bit smoother, but it is optional. A good long blend plus enough liquid gets you very close without the fussy step.
Do I have to peel the sweet potato?
No. I peel it for the smoothest, brightest orange hummus, but you can leave the skin on if you scrub it well first. The texture will be a little more rustic.
Is sweet potato hummus served warm or cold?
Both work. I like it room temperature so the spices taste more lively. If it is cold from the fridge, let it sit out 15 to 20 minutes and give it a stir.
My tahini is super thick or bitter. What should I do?
Tahini varies a lot. If yours is very thick, you may need a few extra tablespoons of water to get that glossy, swirly texture. If it tastes a bit bitter, an extra squeeze of lemon and a pinch more salt usually brings everything back into balance.
