Do I have to steam the rice, or can I boil it?
Steaming is the classic method and gives you that bouncy, separate-grain chew. You can cook glutinous rice in a rice cooker, but it often turns softer and less “sticky rice stall” style. If you do use a rice cooker, reduce water and expect a different texture.
What kind of rice do I need?
Look for glutinous rice (also labeled sweet rice or sticky rice). It is a specific type of rice. Regular jasmine rice will cook, but it will not give you the right sticky-rice texture for this dessert.
Can I use light coconut milk?
You can, but full-fat is the move here. Light coconut milk makes the rice less rich and the sauce noticeably thinner. If light is all you have, keep the heat gentle and cook the sauce a touch longer to thicken.
What mango is best?
Use what is ripe and fragrant. Ataulfo (also called honey mango) is my favorite for its creamy texture and low fiber, but Kent and Tommy Atkins work too if they are properly ripe.
Can I make this dairy-free?
It is already dairy-free if you stick to coconut milk and do not add butter. Just double check your optional toppings.
Why did my rice turn hard after cooling?
Totally normal. Sticky rice firms up fast. Reheat covered with a little water or coconut milk and it will relax back into that chewy, tender texture.
My rice is still chalky or undercooked. What now?
Steam it longer. Different steamers and rice brands vary. Put it back in the steamer and go in 5-minute increments until the center of the grains is translucent and chewy.
My rice feels too wet or soggy. Can I fix it?
Usually this is from not draining well enough after soaking. Spread the rice out and steam it for a few minutes more. If you can, steam briefly uncovered (or with the lid slightly ajar) to let extra moisture cook off, then proceed.
How do I keep the coconut sauce from getting lumpy?
Mix the cornstarch with a little cool liquid first, then whisk it into the warm sauce. Keep the heat low and whisk often.
Can I freeze sticky rice?
Yes. Freeze the sticky rice (not the mango) for up to 1 month. After thawing and reheating, it may be a little less chewy, but it will still be delicious.
