Some days you want bread, but you want it now. These Upgraded Jiffy Corn Muffins are my go-to when dinner needs a cozy side and I do not feel like committing to yeast, proofing, or any kind of drama. You get tender middles, crisp golden edges, and that lightly sweet cornbread vibe that plays nice with chili, soup, barbecue, or a simple plate of beans.
Keep it classic, or toss in cheddar and jalapeños when you want a muffin that makes people hover around the pan. Either way, do yourself a favor and taste one warm with a swipe of butter. It is basically required.
Quick note on mix size: This is written for two 8.5-ounce boxes (Jiffy-style), so you want about 17 ounces total dry mix.
