Black garlic is one of those ingredients that sounds fancy, looks a little mysterious, and then immediately acts like it has known you your whole life. It is soft, dark, and jammy, with a sweet-savory flavor that lands somewhere between balsamic, soy sauce, and roasted garlic, minus the sharp bite.
This pasta is my favorite way to use it when I want maximum flavor with minimum drama. We mash black garlic into butter, loosen it with a splash of pasta water, then hit it with Parmesan and lemon.
