Baked broccoli is my go-to when I want a vegetable that does not feel like I am doing my future self a favor. This one is loud in the best way: garlicky, lemony, and finished with Parmesan so you get those salty, crisp little bits that make you keep “testing” pieces straight off the pan.
The trick is simple. High heat, plenty of surface area, and broccoli that is actually dry before it hits the oil. From there, it is just good seasoning and letting the oven do the work while you pretend you are not going back for a second handful.
