Italian style lasagna with rich ragù, silky béchamel, and layers that slice clean. Make it ahead, bake it cozy, and enjoy the best leftovers.
Lasagna is one of those dishes that makes everyone in the house wander into the kitchen like it is a scheduled event. And this version is my weeknight-friendly, no-fuss favorite: cottage cheese lasagna.
If you grew up on ricotta, I get it. But cottage cheese brings a similar creamy vibe with a little more tang and a surprisingly fluffy texture once it bakes. It also often has more protein than ricotta, depending on the brand you buy. Translation: you still get that classic lasagna comfort, plus a filling that tastes like you actually did something impressive with very normal groceries.
We are keeping it approachable: a simple meat sauce, a quick seasoned cottage cheese layer, and plenty of mozzarella for that pull-apart moment. And yes, crisp edges are non-negotiable.
