One-pan comfort: white beans, blistered tomatoes, spinach, and a bright, creamy cashew-lemon sauce. Plant-based, filling, and ready fast.
Cannellini beans are the quiet overachievers of the pantry. They are mild, creamy, and somehow able to feel both cozy and bright in the same bite if you hit them with the right combo of garlic, herbs, and a little lemon.
This soup is my go-to when I want something that tastes like I planned ahead, even if I absolutely did not. We build flavor fast with sautéed aromatics, simmer everything for a bit, then blend just enough to get that silky texture without turning it into baby food. Finish with good olive oil and something crunchy on top and suddenly it is giving restaurant energy, in sweatpants.
