Silky, cozy, and easy: this heavy cream pasta sauce comes together fast with garlic, Parmesan, and a splash of pasta water for the perfect cling.
Some nights you want dinner to feel like a hug, but your grocery budget is giving you a firm handshake. This is the pasta I make when I want cozy carbs, toasty garlic, and a sauce that turns glossy and clingy without needing anything fancy.
It is built on the same principle as a lot of restaurant pasta: you're not making “cream sauce,” you're making an emulsion. Butter plus starchy pasta water plus a little cheese equals silky. A tiny splash of cream (or milk) makes it extra forgiving, but the real magic is in stirring and tasting as you go.
Budget friendly doesn't mean bland. We're doing garlic, chili flakes if you want, lots of pepper, and a quick squeeze of lemon to keep everything bright.
