Crispy gnocchi, caramelized veggies, and a lemony basil finish. One pan, weeknight-friendly, and dangerously snackable straight off the tray.
Roasted veggies are my weeknight reset button. You toss a bunch of vegetables on a pan, add salt and oil, and the oven does that magic trick where plain produce suddenly tastes like it has a personality. Crisp edges, sweet centers, little toasty bits that you keep “taste testing” straight off the tray.
This is my go-to sheet pan method, plus the small moves that make the difference between fine vegetables and the ones you keep making again. We are talking hot pan, enough space, and a bright lemon garlic finish that makes everything pop.
