Mahi mahi is one of my favorite answers to the question, “What’s for dinner that feels kind of special but won’t hijack my whole evening?” It’s mild, it cooks fast, and it plays incredibly well with bold, bright flavors. In this version, we bake it with a quick lemon-garlic herb butter that melts into the fish and makes a little pan sauce you will absolutely want to spoon over whatever is on your plate.
This is the kind of recipe I’d happily cook on a random Tuesday, but it also looks like you planned ahead. You did not. You just turned on the oven and let butter do what butter does.
