Can I make this without a cast iron skillet?
Yes. Use an 8-inch square pan or a 9-inch round cake pan (lightly greased). You will lose a bit of the dramatic crispy edge, but it will still be tender and delicious.
Why did my gluten free cornbread turn out crumbly?
Usually it is one of three things: the batter was overbaked, the flour blend did not have a binder, or the batter was too dry. Use a gluten free flour blend that includes xanthan gum (or add it), measure flour by spooning into the cup and leveling, and pull the cornbread when the center is just set.
Also, check your cornmeal grind. Very coarse cornmeal can read drier and more crumbly, so stick with medium grind for the most reliable slice. And if your cornmeal looks especially thirsty, let the batter rest closer to 5 to 10 minutes before baking.
Can I make it dairy free?
Yep. Swap the milk for unsweetened almond milk or oat milk, and use melted vegan butter or neutral oil. You still want some fat for tenderness.
Is cornmeal gluten free?
Cornmeal is naturally gluten free, but it can be cross-contaminated during processing. If you are cooking for celiac or strict gluten free needs, buy certified gluten free cornmeal.
Can I make muffins instead?
Yes. Portion into a greased muffin tin and bake at 400°F for 12 to 16 minutes, until the tops spring back and a toothpick comes out with just a few moist crumbs.
