Grilling vegetables sounds like it should be foolproof. You toss them on, you flip them, you feel virtuous. Then somehow they come off either mushy and watery or charred on the outside and raw in the middle. I have lived both realities, usually five minutes before guests arrive.
This recipe is my “friend you actually want in your kitchen” approach to grilled veggies: high heat, smart cuts, enough oil to conduct heat, and a quick lemon-garlic finish that makes everything taste like it was destined to be eaten outside.
