Why is my hot chocolate lumpy?
Cocoa powder likes to clump when it hits liquid. The fix is to whisk the cocoa and sugar with a little hot water (or a few tablespoons of milk) into a smooth paste first, then add the rest of the milk.
Can I make it with water instead of milk?
Yes, but it will taste lighter and less creamy. If you go the water route, add a small splash of cream or a spoonful of half-and-half at the end if you can. Even a tiny bit helps.
How do I make it extra rich like a cafe?
Use whole milk, add 1 to 2 tablespoons of heavy cream, and consider stirring in 1 to 2 ounces of chopped chocolate at the end. Also, do not skip the pinch of salt.
Is cocoa powder the same as hot cocoa mix?
No. Unsweetened cocoa powder has no added sugar. Hot cocoa mix is pre-sweetened and often has milk powder and stabilizers. This recipe is built for unsweetened cocoa powder.
Natural cocoa or Dutch-process?
Either works here. Natural cocoa tastes a little sharper and more classic. Dutch-process is smoother and darker. Use what you have.
Can I make this dairy-free?
Absolutely. Oat milk is my favorite for a creamy texture. Coconut milk (carton) also works. If your plant milk is unsweetened, you may want an extra teaspoon or two of sugar.
Can I double or triple it?
Yes. Just keep the same cocoa paste idea: whisk the cocoa, sugar, salt, and hot water smooth first, then scale up the milk.
