Chicken kabobs are one of those dinners that feel like a little party even when it is just Tuesday. You get the crisp edges, the juicy middle, and those sweet charred bits of pepper and onion that somehow taste like they cooked longer than they did.
This version is my go-to because the marinade is doing the most in the best way: lemon for brightness, garlic for attitude, and a few pantry spices that make the whole thing taste like you know what you are doing. Grill them if you can, but you can absolutely pull this off in the oven with a broiler and a sheet pan, or on a grill pan when the weather is not cooperating.
