If there's one food that can turn an average Tuesday into something you actually look forward to, it's dumplings. Korean mandu are the kind of cozy, crispy-edged, sauce-happy situation that makes you hover by the skillet like it's a campfire.
This version is my go-to: a pork and kimchi filling that's juicy and savory with a little tang, wrapped in store-bought dumpling wrappers because we're here to eat, not audition for a pastry show. We cook them the best way, too: pan-fry for crunch, then steam for tenderness. You get that lacey brown bottom and a soft, bouncy top. In other words, maximum reward for very reasonable effort.
