Common Questions
Do I have to blend the oats?
No. Blending gives a smoother pancake and helps the batter hold together nicely. If you want more texture, leave the oats whole or just pulse a few times. The bowl method below is designed for that.
Can I make these gluten free?
Yes, with two checks: use certified gluten-free oats and swap the all-purpose flour for a 1:1 gluten-free baking flour. Texture may be a touch more delicate, so keep the pancakes a little smaller and flip gently.
Why did my pancakes come out gummy?
Usually it comes down to too much moisture and not enough heat in the center: the batter was too thick after resting, the pan heat was too low (so they steamed instead of seared), or they were flipped too soon. Aim for medium to medium-low heat and cook until you see bubbles on the surface and the edges look set before flipping. If your batter is very thick, loosen it with a splash of milk so the middle can cook through.
Can I make the batter ahead?
You can mix it and refrigerate for up to 12 hours. Oats will keep absorbing liquid, and baking powder can lose a little pep over time, so the pancakes may be slightly less fluffy. In the morning, stir gently and add a splash of milk to get back to a thick-but-pourable consistency. If you want, whisk in a small pinch of baking powder right before cooking and make a quick test pancake to dial in the heat.
What are the best add-ins?
Chocolate chips, blueberries, chopped toasted pecans, mashed banana, or a spoonful of peanut butter in the batter. If you are adding fruit, toss it in after you pour the batter onto the skillet so it does not sink to the bottom of the bowl.
