What is the best cheese for a grilled cheese sandwich?
For maximum melt, use a mix. I love sharp cheddar for flavor plus American for that smooth, gooey melt. Mozzarella works too, but it is mild, so pair it with something punchy like provolone or cheddar.
Butter or mayo on the outside?
Both work, but pick your lane.
Butter method: classic flavor and the least fussy.
Mayo method: spreads easily and browns like a champ. If you go this route, you only need a tiny bit of butter in the pan to keep things from sticking and to add a little buttery flavor.
Why is my bread browned but the cheese is not melted?
Your heat is too high or your cheese pieces are too thick. Use medium-low heat and shred the cheese. If you need a save, add a teaspoon of water to the pan and cover for 30 to 60 seconds to create steam.
How do I keep the cheese from leaking out?
Keep cheese inside the edges of the bread, use shredded cheese for even melt, and press lightly with a spatula once it starts to soften. Do not press hard, or you will encourage the cheese to make a break for it. A slice of American can act like a “melt glue” that holds everything together.
Can I make it in an air fryer?
Yes. Air fry at 370°F for 4 to 5 minutes, flip, then 3 to 4 minutes more. Check early and pull it when it is deeply golden and the cheese is melted. Air fryers vary a lot by model and bread thickness. Secure the top slice with a toothpick if your air fryer is extra breezy. The stovetop still wins for even browning.
What bread is best?
Soft sandwich bread is classic and kid-friendly. Sourdough is my favorite for crunch. Just avoid super thick slices unless you are patient with low heat.
How do I make more than one?
Scale it up by using a larger skillet or a griddle. For multiple sandwiches, cook in batches over medium-low so the pan does not get too hot and scorch the bread before the cheese melts.
