This is the kind of dinner I make when I want something green and comforting but I do not want a sink full of dishes. This Spinach Chickpea Skillet is a one-pan situation: chickpeas simmered in a garlicky tomato sauce, a big tumble of spinach that turns silky in minutes, and a lemony finish that makes the whole thing taste awake.
It is cozy enough to scoop with bread, hearty enough to serve over rice, and flexible enough to handle whatever is hanging out in your fridge. Also, it is very hard to mess up, which is my favorite kind of recipe.
