Crockpot ribs are my favorite kind of kitchen magic: you do a little setup, you walk away, and hours later your house smells like you absolutely had your life together all day.
These ribs lean into everything I want in a slow cooker recipe: a bold dry rub that actually shows up, a sauce that hits sweet, tangy, and a little smoky, and a quick broil at the end for those crisp, sticky edges that make you hover over the pan “just to check” and somehow lose three ribs.
No sear required. If you want to brown them first, go for it, but the rub, the long cook, and that final blast of heat already do a lot of heavy lifting.
