Common Questions
Why are my sweet and sour meatballs watery?
Usually it is one of two things: the sauce did not cook long enough after adding the cornstarch slurry, or extra liquid was added from very wet pineapple or vegetables. Bring the sauce back to a simmer (a gentle low boil is fine) and cook 1 to 2 minutes after the slurry goes in, stirring constantly. Cornstarch needs heat to fully thicken.
How do I thicken sweet and sour sauce with cornstarch?
Mix 1 tablespoon cornstarch with 2 tablespoons cold water (or cold pineapple juice) until smooth. Stir it into simmering sauce and cook until glossy and thick, about 1 to 2 minutes. If you want it thicker, repeat with another small slurry rather than dumping in dry cornstarch.
Can I use frozen meatballs?
Yes. For the quickest version, warm the sauce in a deep skillet, add fully cooked frozen meatballs, cover, and simmer until heated through (often 10 to 15 minutes, depending on size). For a party, add sauce and frozen meatballs to the slow cooker and heat on LOW until hot.
Should I bake or pan-fry the meatballs?
Baking is easiest and less messy. Pan-searing adds deeper browning and is a little faster if you are already at the stove. Either way, you finish them in the sauce so they soak up flavor.
Can I make these ahead?
Yes. You can form the meatballs up to 24 hours ahead and refrigerate them covered. You can also make the sauce (including thickening it) up to 3 days ahead, then rewarm gently and add cooked meatballs to finish.
What should I serve with sweet and sour meatballs?
Steamed rice is the classic, but they are also wonderful with noodles, mashed potatoes for a comfort-food twist, or toothpicks and a simple veggie tray for a party spread.
