Roasted vegetables, herby ricotta, and melty cheese layered into a weeknight friendly veggie lasagna that reheats like a dream.
Zucchini lasagna is one of those dishes that wants to be a problem. The flavor is there, the cozy factor is high, the cheese is working overtime, and then you cut into it and suddenly you have lasagna soup. Not today.
This version keeps the ingredient list normal and the instructions very on purpose. We salt and roast the zucchini just enough to stop it from flooding the pan, then we layer a punchy meat sauce (or keep it vegetarian), a lemony ricotta mix, and plenty of mozzarella. The big secret is also the least exciting one: you rest it before slicing. That is how you get clean squares instead of a delicious puddle.
