Most machines prefer liquids first, then dry ingredients, with yeast last in a little well so it does not touch the liquid until mixing starts. If your manual says otherwise, follow your manual.
Can I use instant yeast instead of active dry?
Yes. Instant yeast works great in bread machines. Use the same amount in this recipe.
Why did my loaf sink in the middle?
Usually it is one of these: too much liquid, too much yeast, or the dough rose too high and collapsed. Next time, check the dough ball during the first mix. It should be smooth and slightly tacky, not a puddle. Add flour 1 tablespoon at a time if needed.
How do I make the crust softer?
Choose the light crust setting if your machine has it, and brush the hot loaf with butter right after it comes out. Then cool under a clean towel for the softest finish.
Can I make it whole wheat?

My dough looks too wet or too dry. What should it look like?
After a few minutes of mixing, you want a smooth dough ball that clears the sides of the pan. It should feel slightly tacky if you touch it, but not paste-like. Oats and flour brands vary, so do not be surprised if you need more than a teaspoon or two of water or an extra tablespoon or two of flour to get there.
Should I refrigerate bread to keep it safe?
You can refrigerate it, but it is mostly a quality choice. The fridge stales bread faster, so the loaf gets drier and more crumbly. For best texture, store at room temperature or freeze for longer storage.
How do I avoid the big hole from the kneading paddle?
Two options: embrace it (my usual plan), or remove the paddle after the last knead if your machine makes it easy and you can safely do it. A lot of machines beep after kneading. At that point, wet your hand, lift the dough out, pull the paddle, tuck the dough back in smooth-side up, and close the lid so it can rise undisturbed.
