A cozy, customizable halo-halo with shaved ice, sweet add-ins, and beloved toppings like leche flan and ube ice cream. Step-by-step, beginner friendly.
Buko pandan is one of those desserts that feels like it has built-in air conditioning. Cold, creamy, lightly sweet, and packed with that vanilla grassy perfume from pandan, it is basically the dessert version of taking your shoes off after a long day.
This is the buko pandan I keep coming back to for potlucks and family dinners because it is easy, make-ahead, and forgiving. We are making pandan gelatin (the pretty green cubes), folding it into a fluffy cream base, then loading the whole thing up with buko (young coconut) for that tender, slightly chewy bite that makes every spoonful interesting.
