What are champignons, exactly?
In many recipes, “champignon” usually means the common white button mushroom (Agaricus bisporus). White buttons work great here, and so do cremini (baby bella) for a slightly deeper flavor.
Can I make it without cream?
Yes. Swap the heavy cream for half-and-half, evaporated milk, or an unsweetened plain oat milk. You can also blend in 1 small boiled potato or a handful of cooked white beans for creaminess.
How do I keep mushroom soup from tasting bland?
Brown the mushrooms well, salt in layers, and finish with a tiny bit of acid. A squeeze of lemon juice or a splash of white wine vinegar at the end makes the flavor pop.
Do I have to blend it?
