Juicy slow cooker meatloaf with a sticky, tangy glaze. Minimal prep, big comfort-food payoff, and leftovers that reheat like a dream.
Meatloaf is one of those comfort foods that can either be legendary or kind of sad, like a dense brick that needs gravy to emotionally recover. The crockpot version, when you do it right, lands firmly in legendary territory: tender all the way through, juicy, and a lot harder to overbake than the oven version because the slow cooker plays nice with moisture.
This recipe keeps the ingredients accessible and the method low-drama. We build a classic meatloaf base, tuck it into the slow cooker on a foil sling so it lifts out cleanly, then paint it with a tangy-sweet glaze that sets up while it cooks. If you want that slightly sticky, caramelized top, I have a quick broil trick at the end. Optional, but extremely worth it.
