What are bierocks, exactly?
Bierocks are savory stuffed bread rolls associated with German-Russian and Volga German communities. The classic filling is seasoned ground beef (or sausage) with cabbage and onions, baked inside a soft yeast dough.
Do I have to use cabbage?
Cabbage is traditional and it melts down into something sweet and cozy. If you are not a cabbage person, try shredded coleslaw mix, chopped kale (cook it down well), or even sauerkraut (squeeze it dry and reduce the salt in the filling).
Why is my filling watery?
Usually the cabbage did not cook long enough, or there is extra fat sitting in the pan. Keep cooking until the cabbage is fully wilted and any liquid has evaporated, and drain off excess grease if needed. Also cool the filling before stuffing so it does not steam the dough from the inside.
My dough is not rising. What now?
First, check your yeast. If it does not get foamy during blooming, it may be old or your milk may be too hot or too cool. For a warm proofing spot, place the covered bowl in an oven that is turned off with the light on, or set it near (not on) a warm stove. If your kitchen is chilly, rising can take longer than the times listed, and that is normal.
Can I make the dough ahead?
Yes. Let it rise once, punch it down, cover tightly, and refrigerate up to 24 hours. Bring to room temp for about 45 to 60 minutes before shaping.
Should I add cheese?
You do not have to, but a little shredded cheddar or Swiss makes them feel extra comforting. I add it because I like joy.
