What is tapioca starch, and can I substitute it?
Tapioca starch (also sold as tapioca flour) is made from cassava. It is the whole point of the chewy texture. There is no true 1:1 substitute that gives the same stretch. If you swap in wheat flour, you will get a different bread entirely.
Why did my pão de queijo come out dense?
The most common culprits are: your liquid was not hot enough to properly set (gelatinize) the starch, you added the eggs while the mixture was too hot and they started to cook, or the dough was too dry from over-measuring starch. Use a scale if you can, and let the dough cool for a few minutes before adding eggs.
Do I need a blender?
No. A bowl and a sturdy spoon work great. A blender makes the texture extra smooth and fast, but it is optional.
What cheese should I use?
Traditional versions use Minas cheese, which can be hard to find. This recipe uses a mix of Parmesan for punch and mozzarella for melt. Monterey Jack or mild cheddar also work.
Can I make these mini or jumbo?
Yes. Mini puffs bake faster, 12 to 16 minutes. Jumbo ones can take 24 to 28 minutes. The key is deep golden color so the outside sets and the inside stays chewy, not gummy.
Are these gluten-free?
They are naturally gluten-free if you use certified gluten-free tapioca starch and cheeses. (Some shredded cheeses use anti-caking agents, so check labels if you are extra sensitive.)
