Swamp Potatoes are what happens when mashed potatoes decide to put on their party outfit. They get extra creamy, extra cheesy, and freckled with green onions and bacon until the whole thing looks a little swampy in the best possible way. I love a side dish that feels like it is doing the most while actually being pretty low effort. Swamp Potatoes are that dish for me. I started making them when I wanted something more fun than plain mash but not as fussy as a fully loaded baked potato bar. It is the kind of recipe where the bowl mysteriously gets scraped clean before the main dish even hits the table. I am not saying I have eaten a spoonful standing over the sink. I am also not saying I have not.

Ingredients

3 lb russet potatoes, peeled and cut into 1 1/2-inch chunks
1 1/2 tsp kosher salt, plus more for the potato water (see note)
8 slices bacon
6 tbsp unsalted butter
3/4 cup sour cream
1/2 cup whole milk (plus up to 1/4 cup more as needed)
2 cups shredded sharp cheddar cheese, divided
4 to 5 green onions, thinly sliced (white and green parts), divided
2 cloves garlic, finely grated or minced
1/2 tsp black pepper
Optional: 1/4 tsp cayenne or hot sauce to taste

Instructions

Heat the oven. Set a rack in the middle of the oven and preheat to 375°F. Butter or lightly grease a 9x13-inch baking dish.
Cook the potatoes. Add potatoes to a large pot and cover with cold water by about 1 inch. Salt the water generously (it should taste nicely seasoned, but not bitter). Bring to a boil, then reduce to a steady simmer and cook until fork-tender, 12 to 15 minutes.
Cook the bacon. While the potatoes cook, set a skillet over medium heat. Cook bacon until crisp, 8 to 10 minutes, turning as needed. Transfer to a paper towel–lined plate. Once cool, chop. If you want extra flavor, carefully pour off all but 1 to 2 tablespoons of bacon fat and save that fat for Step 5.
Drain and dry. Drain potatoes well, then return them to the hot pot. Let them sit for 1 to 2 minutes, stirring once, to steam off extra moisture. This is the secret to fluffy mash.
Mash and make it creamy. Mash the potatoes with butter (and the reserved 1 to 2 tablespoons bacon fat, if using) until mostly smooth. Add sour cream, milk, garlic, pepper, and optional cayenne or hot sauce. Add up to 1 1/2 teaspoons kosher salt, but start with 1 teaspoon and taste first. Bacon and cheddar bring plenty of salt of their own. Mash just until combined. Add a splash more milk if you want them looser.
Make it swampy. Stir in 1 1/2 cups cheddar, most of the bacon (reserve about 2 tablespoons for the top), and most of the green onions (reserve about 2 tablespoons for the top). Taste and adjust salt and pepper.
Bake. Spread the mixture into the baking dish. Top with remaining 1/2 cup cheddar, then the reserved bacon and green onions. Bake until hot throughout and bubbly, 20 to 25 minutes. (If you like numbers, aim for about 165°F in the center.) For a deeper golden top, broil for 1 to 2 minutes, watching closely.
Rest, then serve. Let sit 5 to 10 minutes so it sets up and scoops nicely. Serve warm and accept compliments like it is your job.

Practical Tips and Variations

Want it extra crispy on top? Add a handful of panko mixed with 1 tablespoon melted butter over the cheese before baking.
Add greens for more “swamp”: Stir in 1 cup cooked, well-drained chopped spinach or kale. Squeeze out water first so the potatoes stay fluffy.
Swap the dairy: Greek yogurt can replace sour cream. Half-and-half can replace milk for a richer result.
Cheese options: Pepper jack for heat, smoked cheddar for depth, or a mix of cheddar and mozzarella for extra pull.
