Common Questions
Can I make this into cupcakes or a layer cake?
Yes. For cupcakes, bake at 350°F for about 18 to 22 minutes. For two 9-inch rounds, start checking around 22 to 28 minutes. The fudge frosting is generous, so you can spread it or pipe it once it cools slightly.
What is the difference between icing and frosting here?
This one starts like an icing because it is warm and pourable, then it cools into a frosting-like set that is sliceable and fudgy. Best of both worlds.
My frosting looks grainy. What happened?
Usually it is either the powdered sugar not fully whisked in or the mixture cooling too quickly. Take it off the heat, whisk like you mean it, and if needed add 1 to 2 teaspoons more hot water or milk to smooth it out.
Can I use Dutch-process cocoa?
You can. The flavor will be darker and smoother. Either natural or Dutch-process works in the frosting since we are not relying on cocoa acidity for lift.
Can I use buttermilk?
Yes. Use 1 cup buttermilk in place of the whole milk. Since buttermilk is more acidic, reduce the baking soda to 1/4 teaspoon to keep the rise plush and avoid any soapy aftertaste. If you stick with whole milk, use the full 1/2 teaspoon baking soda.
What if I only have a glass or ceramic pan?
You can still make it. Glass and ceramic bake a bit differently and can brown faster on the edges. For best results, bake at 325°F and start checking around 30 minutes, then go by doneness cues.
How do I get clean slices?
Let the frosting set for about 30 to 45 minutes. Then slice with a long knife dipped in hot water and wiped dry between cuts.
