Is Wiener schnitzel veal or pork?
Traditionally, Wiener schnitzel is made with veal. When it is made with pork, it is commonly labeled Schnitzel Wiener Art (meaning “Viennese style”), though you may also see regional menu names like “Wiener Schnitzel vom Schwein.” At home, pork cutlets are totally common and very tasty.
Why did my breading fall off?
This usually happens when the cutlets are damp or the coating is pressed on too hard. Pat the meat dry first, shake off excess flour, and lightly coat in crumbs. Also, do not move it around a lot in the pan. Let the crust set before flipping.
Do I need to rest the breaded cutlets before frying?
You can fry right away. If you have time, a short rest of 5 to 10 minutes can help the coating adhere, but it is not required.
What breadcrumbs work best?
Fine, dry breadcrumbs give you the most classic crust. Panko works too and will be extra crunchy, just slightly less traditional. For the classic “bubbled” look, keep the crumb layer loose and do not press it on.
